Matching lines back to your catalog is what makes the comparison possible at all, and it is the unglamorous work that has to happen before any price comparison means anything.
Compared per unit, so the case sizes stop lying
One vendor sells a 6 pound bag, another sells a 5 pound bag, and the sticker prices are almost the same. Sourcing normalises to per ounce, per pound or per case so the head-to-head is honest. This is where most of the quiet overpaying hides, because the packaging differences make it invisible on the invoice itself.

Does it find me new vendors?+
No, and it is not trying to. It compares the vendors you already buy from, using your own invoice history. Switching suppliers is a bigger decision than a price line, and it usually involves delivery days, minimums and a relationship. This shows you where you are paying two prices for one item.
What if I only use one vendor?+
Then there is nothing to compare and Sourcing will be quiet. It becomes useful the moment a second vendor sells you the same item, which for most kitchens happens sooner than expected.
