Why juice bar margins are hard to hold

A juice bar sells health at a premium price, and the gross margin math can be excellent. But the inputs are some of the most volatile in food service: fresh produce that changes price weekly, spoils in days, and loses weight to peels and trim before a single ounce reaches the cup.

  • Produce prices swing with the seasons and the weather. Berries, greens, and citrus can move sharply between months, so a menu costed in January is fiction by June. Even bananas, the most stable fruit on the menu, get repriced: the BLS puts the U.S. average at $0.646 per pound in May 2026 (as of July 2026).
  • Yield decides your real cost per ounce. The Goodnature rule of thumb is that 1 lb of produce makes about 10 fl oz of juice on average (Goodnature, as of July 2026). Peels, cores, trim, and pulp mean the price per pound on the invoice is not the price per ounce in the cup.
  • Spoilage is a food cost you never rang up. Fresh produce has a shelf life measured in days, and every over-ordered case that goes soft in the walk-in raises your true cost of goods without touching a single recipe.
  • Boosters and add-ins creep past their upcharge. Protein powders, nut butters, and supplement shots often cost more per scoop than the modifier price on the register, and without per-item costing nobody notices which add-ins lose money.
  • Small tickets multiply small errors. At hundreds of cups a day, a dime of unnoticed cost per smoothie is thousands of dollars a year, spread across produce, frozen fruit, and packaging invoices from different vendors on different schedules.

What a 24 oz smoothie actually costs

Here is a full costing for a 24 oz mixed berry banana smoothie to go. The banana uses the BLS U.S. average retail price; lines marked as example figures are typical 2026 wholesale prices used for illustration, not sourced statistics. At an $8.00 menu price (an example figure for a 24 oz smoothie at an independent shop), that is a 21.5% food cost and $6.28 of gross profit per cup, comfortably inside the Growthink 30 to 35% COGS band and above the 50 to 70% gross margin range Goodnature cites for juice businesses. Two things eat that cushion in real life: spoilage on fresh produce and price moves on frozen fruit. If the berry case rises just $0.50 per pound, this smoothie gains about 16 cents of cost and moves to a 23.5% food cost.

Cold-pressed juice runs heavier. The Goodnature yield rule says 1 lb of produce makes about 10 fl oz of juice, so a 12 oz bottle takes roughly 1.2 lb of produce. At an example blended produce cost of $1.50 per pound, that is $1.80 of fruit and greens plus about $0.52 for the bottle and cap, the packaging figure Goodnature itself uses, or $2.32 in total and a 25.8% cost at a $9.00 price. A month at the blender (an illustrative example, not a real customer)

What should cost of goods sold be for a juice bar?+

Growthink puts typical juice bar COGS at 30% to 35% of total revenue (Growthink, as of July 2026). Made-to-order smoothies often run below that band while cold-pressed juice runs higher because of produce yield, so your menu mix decides where you land. Cost the full recipe first, including the cup, lid, straw, or bottle, then divide by your target food cost percentage. A smoothie that costs $1.72 priced for a 25% food cost lists at about $6.88, and most shops price above that to cover spoilage and waste. For cold-pressed juice, remember yield: 1 lb of produce makes about 10 fl oz of juice on average, so cost the pounds that go into the press, not the ounces that come out.

Why are my juice bar margins shrinking even though sales are up?+

The usual culprits are produce price creep, spoilage, and under-priced add-ins: costs rise a case at a time while menu prices stay flat. A recipe costed in January can be a full point or two more expensive by summer without a single menu change.
